Cinco De Mayo - Guacamole Recipe

Everyone loves a good Guacamole and with Cinco De Mayo right around the corner, there is no better time to put your cooking skills to work. I have been known to challenge others to a "guac off" in my day, so in the spirit of the holiday get together with friends and family for a good old fashioned show down. There are a few simple ingredients but test out different proportions of each to see who makes it best while sipping down a margarita or two!

P.S. this is an easy recipe, perfect for any novice

Enjoy my favorite guacamole a little heat? Add minced jalapeno for a kick!
Fun Fact: Cinco De Mayo is celebrated on the 5th of May in honor of The Day of the Battle of Puebla. This battle was when the Mexican's fought against the French, which took place on May 5, 1862 and has since become a celebration of pride throughout Mexico! Here is one of my favorite guacamole recipes that can be used to celebrate the holiday.

  • 4 ripe Hass Avocados, seeded, diced and scooped from peel (about 26 oz before peeled and cored)
  • 1 1/2 Tbsp fresh lime juice
  • 1/4 cup + 2 Tbsp finely chopped red onion
  • 1 large Roma tomato, seeds and pulp removed then diced
  • 1 clove garlic, minced
  • 2 Tbsp chopped cilantro
  • 1 - 3 pinches cayenne pepper, optional
  • Salt and freshly ground black pepper, to taste

Partially mash avocados with a fork on a cutting board or in a large bowl, pour lime juice over top and continue to mash to reach desired consistency. Transfer to a mixing bowl. Run chopped red onions under cold water (to remove harsh bite from onion), drain well and add onions to avocado mixture, along with garlic, cilantro, cayenne pepper and season with salt and pepper to taste. Stir to combine and fold in diced tomatoes. Serve with tortilla chips or as a topping on your taco's.

Thank you, Cooking Classy, for such a fresh guacamole recipe!
